Cozy Pumpkin Oatmeal

This recipe screams fall and coziness and comfort. Whip this up in the morning, and enjoy for a hearty fall breakfast! Loaded with anti-inflammatory turmeric, nutrient dense cauliflower, and protein packed collagen!

 

Ingredients:

Serves: 2

3/4 cup coconut milk

1/2 cup frozen cauliflower rice

1/2 cup old fashioned oats

1/3 cup pumpkin puree

2 scoops Collagen Peptides

1 T maple syrup

1 tsp vanilla

1 tsp pumpkin pie spice

1/4 tsp cinnamon (optional)

1/8 tsp turmeric

Recipe:

In a saucepan over medium heat, mix together milk, cauliflower rice, oats, pumpkin puree, maple syrup, and collagen.

Bring to a boil.

Turn heat to low to simmer, and add spices.

Simmer for 10 minutes, or until thick cooked through.

Remove from heat and add vanilla.

Serve warm with pecans or other favorite toppings!
