This creamy soup is the perfect blend of comfort and nutrition. If you're pressed for time, skip the fresh broccoli and cauliflower, and opt for frozen instead. If you have leftover ham, this would be the perfect soup to add it to!
KETO Broccoli Cauliflower Soup

Recipe
1 head cauliflower, cut into florets
1 head broccoli, cut into florets
1 turnip, peeled and diced
1/2 onion, diced
1 T butter
4 cups chicken (or vegetable) broth
2 oz. cream cheese
6 oz. sharp cheddar cheese, shredded
1/2 cup cream
2 tsp salt
1 tsp pepper
1/2 tsp fresh thyme
Instructions
Heat a large sauce pot to medium heat and add butter.
When melted, add onions and saute for 2-3 minutes or until fragrant.
Add the chicken broth, cauliflower, broccoli, and turnip, and bring to a simmer.
Once simmering, turn heat to low and simmer for 15 minutes or until vegetables are soft.
Add cream cheese and let melt for 1 minute.
With an immersion blender, puree until smooth.
Add cream, shredded cheese, salt, pepper, and thyme and stir to combine.
Garnish with extra pepper and thyme.
