Fast-paced, busy, run-run-run, you get me, right? What do we eat when we need something quick and healthy to sustain us when the 2 o’clock snack attack hits, or when we need that extra boost after a satisfying workout?
These collagen bars are the perfect snack to whip up on the weekend and store in your fridge or freezer for easy access whenever you need it most. Sugar free, gluten free, high in protein and healthy fats, this simple recipe mixes easily in your blender or food processor.
Loaded Peanut Butter Collagen Protein Bars
Serves: 8
Recipe
6 dates
1/2 c. peanut butter (all natural)
3 scoops Marine Collagen
1/4 tsp vanilla
1/8 tsp salt
1/2 tbsp coconut butter
1 tbsp mini chocolate chips
Instructions
Line a bread pan (or comparable size dish) with parchment paper.
Combine first 6 ingredients in food processor or blender.
Mix until combined.
Add mini chocolate chips and mix at a low speed or by hand to incorporate.
Spread evenly into pan. (If you prefer to make these into balls rather than bars, this would be the time!)
These can be eaten right away (especially if your patience threshold for amazing little bars like these is very low); otherwise, place in the fridge for half an hour or the freezer for 15 minutes to harden a bit. Cut into 8 squares.
Enjoy!
