Ooey Gooey Pumpkin Bars

 

There's a reason we call these Ooey Gooey Pumpkin Bars- imagine the fudginess of your favorite brownies meets a rich, decadent cake meets the classic comforts of fresh pumpkin bread. Packed with collagen, your life will never be the same! They are delicious, nutritious, and the perfect fall afternoon treat with a cup of coffee. 


Ingredients

1/2 cup unsweetened vanilla almond milk

1/4 cup Marine Collagen

1 cup pumpkin or squash

2 tsp pure vanilla

1 3/4 cups almond butter

2/3 cup coconut palm sugar

1 cup oat flour

2 tsp baking soda

1/4 tsp salt

1 tsp cinnamon

1 tsp pumpkin pie spice

1/3 cup chocolate chips or chunks

    Instructions

    Preheat oven to 350.

    In a large bowl, dissolve Marine Collagen into almond milk.

    Continue to add everything else in order listed except chocolate chips.

    Stir till combined.

    Pour into 9x13" pan lined with parchment paper.

    Toss chocolate chips on top.

    Bake for 25-30 minutes or till middle has set.

    Don’t over bake!
