These are exactly what they sound like! A peanut butter scone with chocolate chips sprinkled throughout in perfectly tender, hearty scone form. What makes these even more amazing is the one bowl, mix and bake simplicity of it all.
Ingredients:
6 tablespoons butter
1/4 cup peanut butter
1 tsp vanilla extract
2 cups whole wheat flour
1/3 cup coconut sugar
1/2 tsp salt
1 heaping tsp baking powder
1/4 tsp baking soda
1/4 cup Collagen Peptides
1/2 cup plain, full fat yogurt
4 T buttermilk
1/2 cup chocolate chips, plus more for sprinkling
Instructions:
Preheat oven to 400 degrees and line a baking stone (or cast iron skillet, or baking sheet) with parchment paper.
In a mixing bowl, warm butter and peanut butter until softened.
Add remaining ingredients and mix until just combined.
Turn dough onto baking stone and form into a disk, approximately 8-10 inches wide and 1 1/2 inches tall.
Sprinkle with remaining chocolate chips.
Using a sharp knife, slice into 8 wedges.
Bake scones for 18-20 minutes, or until golden brown on top.
Enjoy with a generous serving of butter on top!
